Grab a bowl, in goes.....
3 Mashed Bananas
2 Eggs. Give them a good thrashing with a fork first. (If you have duck eggs use them)
2 Cups of Flour (I use whole-meal)
3/4 Cup of Sugar (I use raw)
1 Tsp Salt
1 Tsp Bi-Carb
1/2 Cup Coarsely chopped walnuts
Mix-er all up and fling into a loaf tin.
180 degree or 350F oven for 1 hour.

Ta love. I have six overripe bananas (how times have changed!) and I was looking for an outlet. I'll need to do chicken eggs, though... x
